2 cups of raw pumpkin seeds (pepitas)
1 cup of cashews
3 tablespoons of olive oil
¼ cup of honey
1 teaspoon of chili powder
1 teaspoon of lime zest
1 teaspoon of salt
½ teaspoon of cayenne pepper (adjust to taste)
¼ cup of fresh cilantro, chopped (optional, for garnish)
Preheat the oven to 350°F (175°C).
In a large mixing bowl, combine the pumpkin seeds and cashews. Optionally, add any favorite nuts.
In a small saucepan, heat the olive oil and honey until combined. Stir in chili powder, lime zest, salt, and cayenne pepper.
Pour the hot honey mixture over the seeds and nuts and mix until coated.
Line a baking sheet with parchment paper. Spread the mixture in a single layer and bake for about 15-20 minutes, stirring halfway through.
Let the mix cool on the baking sheet for about 10 minutes. Optionally, garnish with fresh cilantro.
