For the Fries:

  • 2 large russet potatoes (or use frozen fries for convenience)
  • 2 tbsp vegetable oil
  • Salt, to taste

For the Animal Style Sauce:

  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp sweet pickle relish
  • 1 tsp white vinegar
  • ½ tsp sugar

For the Toppings:

  • 1 large onion, finely chopped
  • 1 tbsp butter
  • 1 tsp sugar
  • 4 slices American cheese

Instructions

1️⃣ Prepare the Fries

  • Cut russet potatoes into fries and soak them in cold water for 30 minutes (removes excess starch for crispier fries).
  • Drain, pat dry, and toss with vegetable oil & salt.
  • Bake at 425°F (220°C) for 25 minutes, flipping halfway OR air-fry at 380°F for 15 minutes until crispy.

2️⃣ Make the Sauce

  • In a bowl, mix mayonnaise, ketchup, mustard, relish, vinegar, and sugar.
  • Stir until smooth and refrigerate while prepping the onions.

3️⃣ Caramelize the Onions

  • Heat butter in a pan over medium-low heat.
  • Add chopped onions and sugar, then cook for 15 minutes, stirring occasionally until golden brown.

4️⃣ Assemble the Fries

  • Place cooked fries on a plate.
  • Lay cheese slices on top and let them melt (or pop them under the broiler for 1 minute).
  • Spoon caramelized onions over the cheese.
  • Drizzle generously with Animal Style sauce.
