Ingredients
1 cup grated zucchini (about 1 medium zucchini)
1 cup all-purpose flour
1/2 cup whole wheat flour
1/2 cup chocolate chips
1/2 cup sugar
1/2 cup brown sugar
1/3 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine grated zucchini, sugars, vegetable oil, eggs, and vanilla extract until smooth.
- In another bowl, whisk together all-purpose flour, whole wheat flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in chocolate chips gently.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
