Instant Pot Ranch Chicken Tacos are a quick and flavorful delight, perfect for busy weeknights. Tender chicken infused with ranch seasoning is the star of these delicious tacos.
Ingredients
Chicken Breasts: 2 large (about 500g)
Ranch Seasoning: 1 packet (about 1 oz or 28g)
Taco Shells: 8 (hard or soft)
Lettuce: 1 cup
shredded
Tomatoes: 1 cup
diced
Cheese: 1 cup
shredded (cheddar or your favorite type)
Avocado: 1
sliced
Salt and Pepper: to taste
Olive Oil: 1 tablespoon (for cooking)
Instructions
- Set your Instant Pot to sauté mode and add olive oil.
- Once the oil is hot, add the chicken breasts and season them with salt and pepper. Sear them for about 2-3 minutes on each side until browned.
- Sprinkle the ranch seasoning over the chicken, then add 1/2 cup of water to the pot.
- Close the lid and set the Instant Pot to pressure cook for 10 minutes.
- After cooking, allow for a natural release for 5 minutes, then quick release the remaining pressure.
- Shred the chicken in the pot using two forks and mix it with the remaining sauce.
- Assemble your tacos by filling each taco shell with shredded chicken, lettuce, tomatoes, cheese, and avocado.
Notes
Feel free to customize your tacos with additional toppings like salsa, sour cream, or jalapeños. You can also use frozen chicken, just increase the cooking time slightly.
