Ingredients

  • 2 tbsp freshly squeezed lemon juice

  • 1 tsp Dijon mustard

  • 12 anchovy fillets or 1 tsp anchovy paste (optional, but authentic)

  • 1 tsp Worcestershire sauce

  • 1 garlic clove, minced

  • ¼ cup grated Parmesan cheese

  • Salt & freshly ground black pepper, to taste

  • 12 tbsp water or olive oil (to adjust consistency)


Instructions

  1. Blend together: In a bowl or small food processor, combine mayo, lemon juice, Dijon mustard, anchovy (if using), Worcestershire, and garlic. Mix until smooth.

  2. Add cheese & season: Stir in Parmesan and season with salt and pepper to taste.

  3. Adjust texture: Add a little water or olive oil to thin the dressing to your liking.

  4. Chill before serving: Let the dressing sit in the fridge for at least 15 minutes to develop flavor.

Notes

  • Skip anchovies for a vegetarian version.

  • For a lighter option, substitute half the mayo with Greek yogurt.
