Description
A rich, creamy Caesar dressing made from scratch that pairs perfectly with crisp romaine, crunchy croutons, and Parmesan cheese. Once you try it, you’ll never go back to bottled!
Ingredients

½ cup mayonnaise

2 tbsp freshly squeezed lemon juice

1 tsp Dijon mustard

1–2 anchovy fillets or 1 tsp anchovy paste (optional, but authentic)

1 tsp Worcestershire sauce

1 garlic clove, minced

¼ cup grated Parmesan cheese

Salt & freshly ground black pepper, to taste

1–2 tbsp water or olive oil (to adjust consistency)
Instructions

Blend together: In a bowl or small food processor, combine mayo, lemon juice, Dijon mustard, anchovy (if using), Worcestershire, and garlic. Mix until smooth.

Add cheese & season: Stir in Parmesan and season with salt and pepper to taste.

Adjust texture: Add a little water or olive oil to thin the dressing to your liking.

Chill before serving: Let the dressing sit in the fridge for at least 15 minutes to develop flavor.

Skip anchovies for a vegetarian version.

For a lighter option, substitute half the mayo with Greek yogurt.
