8 oz rice noodles
1 lb boneless, skinless chicken breast, sliced into thin strips
2 tablespoons vegetable oil
3 cloves fresh garlic, minced
2 eggs, lightly beaten
1 cup bean sprouts
1/2 cup green onions, chopped
1/4 cup roasted peanuts, crushed
3 tablespoons fish sauce
2 tablespoons tamarind paste
1 tablespoon sugar
Juice of 1 lime
Fresh cilantro, for garnish
Chili flakes, optional
Instructions
Soak rice noodles in hot water for 10-15 minutes until soft but still with a little bite. Drain and set aside.
In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add sliced chicken and sauté until cooked through and golden brown, about 4-5 minutes. Remove chicken and set aside.
In the same skillet, add the remaining tablespoon of oil and minced garlic. Stir-fry for about 30 seconds until fragrant.
Push garlic to one side of the skillet, pour in beaten eggs, and scramble gently until just cooked, then mix with garlic.
Add the cooked chicken back along with softened noodles, and toss together.
Stir in fish sauce, tamarind paste, sugar, and lime juice. Mix well and adjust seasoning if necessary.
Toss in bean sprouts and green onions, stir-fry for another minute until heated through.
Serve on plates/bowls, topped with crushed peanuts, fresh cilantro, and chili flakes if desired.
