  • 1 lb boneless, skinless chicken breast, sliced into thin strips

  • 3 cloves fresh garlic, minced
  • 2 eggs, lightly beaten
  • 1 cup bean sprouts
  • 1/2 cup green onions, chopped
  • 1/4 cup roasted peanuts, crushed
  • 3 tablespoons fish sauce
  • 2 tablespoons tamarind paste
  • 1 tablespoon sugar
  • Juice of 1 lime
  • Fresh cilantro, for garnish
  • Chili flakes, optional

  • Instructions

  • Soak rice noodles in hot water for 10-15 minutes until soft but still with a little bite. Drain and set aside.
  • In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add sliced chicken and sauté until cooked through and golden brown, about 4-5 minutes. Remove chicken and set aside.
  • In the same skillet, add the remaining tablespoon of oil and minced garlic. Stir-fry for about 30 seconds until fragrant.
  • Push garlic to one side of the skillet, pour in beaten eggs, and scramble gently until just cooked, then mix with garlic.
  • Add the cooked chicken back along with softened noodles, and toss together.
  • Stir in fish sauce, tamarind paste, sugar, and lime juice. Mix well and adjust seasoning if necessary.
  • Toss in bean sprouts and green onions, stir-fry for another minute until heated through.
  • Serve on plates/bowls, topped with crushed peanuts, fresh cilantro, and chili flakes if desired.
