1 lb medium shrimp, peeled and deveined
1 can (14 oz) coconut milk
2 cups vegetable or chicken broth
1 onion, finely chopped
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
2–3 tablespoons red curry paste
1 tablespoon soy sauce
1 tablespoon lime juice
1 red bell pepper, sliced
1 cup cherry tomatoes, halved
3–4 cups fresh spinach or kale
Salt and pepper, to taste
Fresh cilantro, chopped for garnish
Lime wedges for serving
Instructions
In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes. Add the minced garlic and grated ginger, and cook for another minute.
Stir in the red curry paste and let it bloom for about 2 minutes.
Add the coconut milk and broth to the pot. Stir until combined and bring to a gentle simmer.
