2 medium acorn or butternut squashes
1 cup quinoa, rinsed
2 cups vegetable broth
1 tablespoon olive oil
1 medium onion, diced
2 cloves fresh garlic, minced
1 bell pepper, diced
1 cup chopped kale
1 teaspoon dried thyme
1 teaspoon ground cinnamon
Salt and pepper, to taste
½ cup cranberries, dried or fresh
½ cup pecans, chopped (optional)
2 cups Brussels sprouts, halved
2 carrots, sliced
1 red onion, quartered
2 tablespoons balsamic vinegar
Instructions
Preheat your oven to 400°F (200°C).
Cut the squashes in half lengthwise and scoop out the seeds. Lightly brush the insides with olive oil, and season with salt and pepper. Place them cut side down on a baking sheet.
Roast in the preheated oven for about 25-30 minutes, or until tender.
In a saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed.
In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant (3-4 minutes).
Stir in bell pepper and kale along with thyme, cinnamon, salt, and pepper. Cook for another 5 minutes.
In a large bowl, combine cooked quinoa, sautéed veggies, cranberries, and pecans.
Flip the roasted squash halves over and fill with the quinoa mixture.
Return stuffed squashes to oven and roast for another 10-15 minutes.
