Ingredients
• 2 tablespoons olive oil
• 1 medium onion, chopped
• 4 garlic cloves, minced
• 2 (28 oz) cans crushed tomatoes
• 1 cup vegetable broth
• 1 teaspoon sugar (optional)
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1 cup heavy cream or half-and-half
• 1/4 cup chopped fresh basil (or 1 tablespoon dried basil)
• Optional: red pepper flakes for heat
Instructions
1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
2. Stir in garlic and cook for 1 more minute.
3. Add crushed tomatoes, vegetable broth, sugar (if using), salt, and pepper. Stir to combine.
4. Bring to a simmer and let cook for 15–20 minutes to blend the flavors.
5. Use an immersion blender to blend the soup until smooth (or carefully transfer to a blender in batches).
6. Return soup to pot and stir in cream and chopped basil. Simmer for an additional 5 minutes.
7. Taste and adjust seasoning as needed. Serve hot, garnished with extra basil or a swirl of cream.
Notes
Serve with crusty bread or a classic grilled cheese.
For a vegan version, use coconut milk or a plant-based cream alternative.
