1 pound of turkey sausage, casings removed
2 cups of cottage cheese
1 cup of shredded mozzarella cheese
2 cups of fresh spinach, chopped
1 red bell pepper, diced
3 large eggs
1 teaspoon of garlic powder
1 teaspoon of onion powder
Salt and pepper to taste
Fresh herbs for garnish
Instructions
Preheat your oven to 350°F (175°C).
In a frying pan over medium heat, add the turkey sausage. Use a spatula to break it apart as it cooks, about 8-10 minutes. Drain any excess fat if necessary.
In a large bowl, combine the cottage cheese, ½ cup mozzarella cheese, spinach, red bell pepper, eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Fold the cooked turkey sausage into the cottage cheese mixture gently.
Grease a 9×13 inch baking dish, and pour the mixture in, spreading it evenly.
Sprinkle the remaining mozzarella cheese on top. Bake for 30-35 minutes, or until the top is golden and bubbly.
Let it cool for about 5 minutes before serving.
