1 cup graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
16 oz cream cheese, softened
2/3 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/4 cup sour cream
1/2 cup caramel sauce
1/4 cup chocolate sauce
1/2 cup chopped pecans, toasted
Instructions
Preheat your oven to 325°F (160°C).
In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until it resembles wet sand. Spoon about 1 tablespoon into each cavity of a mini muffin tin, pressing it down firmly.
Bake the crusts for about 5–7 minutes until lightly golden. Let them cool.
In a mixing bowl, beat softened cream cheese until smooth. Add sugar and mix well. Add eggs one at a time while mixing gently.
Stir in vanilla extract and sour cream until just blended.
Spoon cheesecake filling into each mini muffin tin on top of the cooled crusts, leaving 1/4 inch space at the top.
Bake for about 15–18 minutes until edges are set but center jiggles slightly.
Let cheesecakes cool in the oven for about 30 minutes.
Chill in the refrigerator for at least 2 hours (or overnight).
Once chilled, drizzle with caramel and chocolate sauces, sprinkle with chopped pecans and serve.
