2 salmon fillets (6 ounces each)
1 cup cooked shrimp (chopped)
1/4 cup cream cheese (softened)
1/4 cup breadcrumbs (Panko)
2 tablespoons fresh parsley (chopped)
1 clove garlic (minced)
1 tablespoon lemon juice (freshly squeezed)
1 teaspoon Old Bay seasoning
Salt and pepper to taste
Olive oil for drizzling
Instructions
Preheat your oven to 375°F (190°C).
In a bowl, combine the chopped shrimp, cream cheese, breadcrumbs, parsley, garlic, lemon juice, Old Bay seasoning, and a pinch of salt and pepper. Mix until well incorporated.
Lay the salmon fillets skin-side down on a cutting board and make a horizontal slit in each fillet to create a pocket.
