  • 23 green chilies, slit

  • 1 tablespoon of tomato ketchup
  • 1 tablespoon of vinegar
  • Salt and black pepper, to taste
  • Chopped spring onions, for garnish

  • Instructions

  • Marinate the Chicken: In a bowl, combine the chicken pieces with soy sauce and cornstarch. Mix well to coat the chicken evenly. Let it marinate for about 15 minutes while you prep the other ingredients.
  • Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat.
  • Cook the Chicken: Add the marinated chicken to the skillet in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Transfer to a plate and set aside.
  • Sauté the Aromatics: In the same skillet, add a bit more oil if needed, then toss in the minced garlic, ginger, and green chilies. Sauté for 1-2 minutes until fragrant.
  • Add the Vegetables: Stir in the chopped onion and bell pepper. Sauté for another 2-3 minutes until the onion is translucent but still has a nice crunch.
  • Combine and Sauce It Up: Return the cooked chicken to the skillet. Add the red chili sauce, ketchup, and vinegar. Toss everything together until well coated. Season with salt and pepper to your liking.
