500 grams of boneless chicken, cut into bite-sized chunks
1 tablespoon of soy sauce
1 tablespoon of cornstarch
2 tablespoons of vegetable oil
1 medium onion, finely chopped
1 bell pepper, diced
3–4 cloves of garlic, minced
1-inch piece of ginger, minced
2–3 green chilies, slit
2 tablespoons of red chili sauce
1 tablespoon of tomato ketchup
1 tablespoon of vinegar
Salt and black pepper, to taste
Chopped spring onions, for garnish
Instructions
Marinate the Chicken: In a bowl, combine the chicken pieces with soy sauce and cornstarch. Mix well to coat the chicken evenly. Let it marinate for about 15 minutes while you prep the other ingredients.
Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat.
Cook the Chicken: Add the marinated chicken to the skillet in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Transfer to a plate and set aside.
Sauté the Aromatics: In the same skillet, add a bit more oil if needed, then toss in the minced garlic, ginger, and green chilies. Sauté for 1-2 minutes until fragrant.
Add the Vegetables: Stir in the chopped onion and bell pepper. Sauté for another 2-3 minutes until the onion is translucent but still has a nice crunch.
Combine and Sauce It Up: Return the cooked chicken to the skillet. Add the red chili sauce, ketchup, and vinegar. Toss everything together until well coated. Season with salt and pepper to your liking.
Garnish and Serve: Once everything is heated through, remove from heat. Garnish with chopped spring onions and serve hot.
