Description
Discover how to make Italian Cowboy Caviar, a flavor-packed dish that will elevate your appetizer game and impress your guests! Perfect for any occasion.
Ingredients
Scale
1 can black beans, rinsed and drained
1 can garbanzo beans (chickpeas), rinsed and drained
1 cup cherry tomatoes, halved
1 cup corn (fresh, frozen, or canned)
1 red bell pepper, diced
1/2 red onion, finely chopped
1 cup fresh parsley, chopped
1/2 cup mozzarella balls, halved or diced (optional)
1/4 cup olive oil
3 tablespoons red wine vinegar
1 teaspoon Italian seasoning
Salt and pepper to taste
Juice of 1 lemon
Instructions
Start by rinsing and draining your black beans and chickpeas with cold water. Then set them in a large mixing bowl. Next, chop up your veggies including the cherry tomatoes, bell pepper, and red onion. Don't forget to roughly chop the parsley.
To the bowl of beans and veggies, add the corn and mozzarella balls (if using). Give it a gentle toss to combine, taking care not to crush the beans.
In a small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, pepper, and the juice of one lemon.
Pour the dressing over the bean and veggie mixture and toss gently to coat.
For the best flavor, let your Italian Cowboy Caviar sit in the fridge for about 30 minutes.
Grab your favorite serving bowl, scoop up your Italian Cowboy Caviar, and enjoy!
