  • 1 medium onion, diced
  • 3 cloves of garlic, minced
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 medium zucchini, diced
  • 1 can (14 oz) of diced tomatoes
  • 6 cups of vegetable or chicken broth
  • 1 cup of cooked pasta (ditalini or small shell pasta)
  • 1 cup of green beans, trimmed and cut into 1-inch pieces
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • Salt and pepper to taste
  • Freshly grated Parmesan for serving
  • Fresh parsley, chopped, for garnish

  • Instructions

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  • Toss the minced garlic into the pot and sauté for another 1-2 minutes.
  • Add the chopped carrots and celery, stirring occasionally. Let them cook for about 5 minutes until they begin to soften.
  • Add in the diced zucchini and the can of diced tomatoes (juice and all!). Stir everything together.
  • Add the vegetable or chicken broth to the pot, and bring everything to a gentle boil.
  • Sprinkle in the dried oregano and basil, then season generously with salt and pepper to taste.
  • Once boiling, add the green beans, then reduce the heat to a simmer. Let it all bubble away for about 20-25 minutes.
  • Just before serving, stir in the cooked pasta, letting it warm through for a couple of minutes.
  • Ladle the soup into bowls and sprinkle with freshly grated Parmesan and chopped parsley.
