1 cup of Arborio rice
1 pound of Italian sausage
1 medium onion, diced
2 garlic scapes, chopped
1 red bell pepper, diced
1 yellow bell pepper, diced
4 cups of chicken or vegetable broth
1/2 cup of dry white wine
1/2 cup of grated Parmesan cheese
2 tablespoons of olive oil
Salt and pepper to taste
Chopped fresh parsley for garnish
In a saucepan, heat the chicken or vegetable broth over low heat.
In a large skillet, heat 1 tablespoon of olive oil over medium heat, crumble in the sausage and cook until browned.
Transfer the sausage to a plate, leaving the drippings, and add another tablespoon of olive oil.
Sauté diced onion until translucent, then add garlic scapes and bell peppers, cooking until softened.

Pour in dry white wine if using, stirring until most of the liquid is absorbed.
Add the warm broth one ladle at a time while stirring, until the rice is al dente and creamy.

Season with salt and pepper, garnish with parsley, and serve hot.
