  • 1 lb Italian sausage (mild or spicy)
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Parmesan cheese, grated for serving
  • Fresh basil leaves for garnish

  • Instructions

  • Start by cooking the pasta. Boil a large pot of salted water and add your pasta. Cook it according to the package instructions until al dente. Remember to reserve about a cup of pasta water before draining!
  • While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the Italian sausage, breaking it up with a spoon. Cook until browned and cooked through, about 5-7 minutes.
  • Once the sausage is cooked, toss in the minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the can of diced tomatoes, along with the oregano and basil. Stir and let simmer for about 5 minutes.
  • If the sauce seems too thick, add a splash of reserved pasta water until you reach desired consistency.
  • When the pasta is ready, drain it and add it directly to the skillet with your sauce. Toss everything together until the pasta is coated.
  • Serve hot, topped with freshly grated Parmesan cheese and basil if you like.
