8 oz pasta (spaghetti, penne, or your favorite shape)
1 lb Italian sausage (mild or spicy)
2 tbsp olive oil
4 cloves garlic, minced
1 can (14 oz) diced tomatoes
1 tsp dried oregano
1 tsp dried basil
Salt and pepper to taste
Parmesan cheese, grated for serving
Fresh basil leaves for garnish
Instructions
Start by cooking the pasta. Boil a large pot of salted water and add your pasta. Cook it according to the package instructions until al dente. Remember to reserve about a cup of pasta water before draining!
While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the Italian sausage, breaking it up with a spoon. Cook until browned and cooked through, about 5-7 minutes.
Once the sausage is cooked, toss in the minced garlic and sauté for about 1 minute until fragrant.
Pour in the can of diced tomatoes, along with the oregano and basil. Stir and let simmer for about 5 minutes.
If the sauce seems too thick, add a splash of reserved pasta water until you reach desired consistency.
When the pasta is ready, drain it and add it directly to the skillet with your sauce. Toss everything together until the pasta is coated.
Serve hot, topped with freshly grated Parmesan cheese and basil if you like.
