1 ½ cups graham cracker crumbs
½ cup granulated sugar
½ cup unsalted butter, melted
1 teaspoon cinnamon
24 ounces cream cheese, softened
1 ½ cups pumpkin puree
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground ginger
½ teaspoon salt
Instructions
Preheat your oven to 325°F (160°C). In a medium bowl, combine the graham cracker crumbs, sugar, melted butter, and cinnamon. Mix well until combined.
Press the mixture into the bottom and about an inch up the sides of a 9-inch springform pan. Use your fingers or the bottom of a glass to pack it down firmly. Bake for 10 minutes until set and fragrant. Remove from the oven and let it cool.
In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the sugar, continuing to beat until well combined.
Mix in the pumpkin puree, eggs, and vanilla extract until just blended. Be careful not to overmix.
Stir in the cinnamon, nutmeg, ginger, and salt until well integrated.
Pour the creamy filling into your cooled crust. Tap the pan lightly on the counter to release any air bubbles. Bake for about 50-60 minutes, or until the edges are set and the center jiggles slightly.
Turn off the oven, crack the door, and let the cheesecake cool in the oven for an hour. After that, refrigerate for at least 4 hours, preferably overnight.
Once set, decorate with melted chocolate or orange icing to draw jack-o’-lantern faces on top.
