  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ½ teaspoon salt

  • Instructions

  • Preheat your oven to 325°F (160°C). In a medium bowl, combine the graham cracker crumbs, sugar, melted butter, and cinnamon. Mix well until combined.
  • Press the mixture into the bottom and about an inch up the sides of a 9-inch springform pan. Use your fingers or the bottom of a glass to pack it down firmly. Bake for 10 minutes until set and fragrant. Remove from the oven and let it cool.
  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the sugar, continuing to beat until well combined.
  • Mix in the pumpkin puree, eggs, and vanilla extract until just blended. Be careful not to overmix.
  • Stir in the cinnamon, nutmeg, ginger, and salt until well integrated.
  • Pour the creamy filling into your cooled crust. Tap the pan lightly on the counter to release any air bubbles. Bake for about 50-60 minutes, or until the edges are set and the center jiggles slightly.
  • Turn off the oven, crack the door, and let the cheesecake cool in the oven for an hour. After that, refrigerate for at least 4 hours, preferably overnight.
  • Once set, decorate with melted chocolate or orange icing to draw jack-o’-lantern faces on top.
