2 cups cooked shredded chicken (rotisserie works great!)
8 oz cream cheese, softened
1 cup shredded cheddar cheese, plus more for topping
1 cup salsa
1/2 cup diced jalapeños
8 small flour tortillas
1 tablespoon garlic powder
1 teaspoon cumin
Salt and pepper to taste
Cilantro for garnish (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, combine the shredded chicken, softened cream cheese, 1 cup of shredded cheddar, salsa, diced jalapeños, garlic powder, cumin, salt, and pepper. Mix until creamy, being careful not to overmix.
Grab a tortilla and spoon about 1/4 cup of the chicken mixture into the center. Roll it up tightly and place seam-side down in a greased 9×13-inch baking dish.
Pour the remaining salsa over the top and sprinkle with the rest of the shredded cheddar cheese.
Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
