  • 1 tbsp sugar

For the filling:

  • 2 cups fresh strawberries, hulled and halved

  • 2 tbsp strawberry jam

  • 2 tbsp sugar (plus extra for sprinkling)

  • 1 tbsp cornstarch

  • ½ tsp vanilla extract

  • 1 egg (for egg wash)


Instructions

  1. Make crust: Pulse flour, sugar, and salt in a food processor. Add butter and pulse until crumbly. Add ice water gradually until dough forms. Shape into a disk, wrap, and chill for 30 minutes.

  2. Prepare filling: Toss strawberries with jam, sugar, cornstarch, and vanilla.

  3. Assemble: Roll chilled dough into a 10-inch circle. Place strawberry filling in the center, leaving a 2-inch border. Fold edges over the filling, pleating gently.

  4. Bake: Brush crust with egg wash and sprinkle with sugar. Bake at 375°F (190°C) for 40 minutes, until golden and bubbly. Cool slightly before serving.

  • Serve warm with vanilla ice cream or whipped cream.
