Ingredients
For the crust:

1 ¼ cups all-purpose flour

½ cup cold unsalted butter, cubed

2–3 tbsp ice water

1 tbsp sugar

¼ tsp salt
For the filling:

2 cups fresh strawberries, hulled and halved

2 tbsp strawberry jam

2 tbsp sugar (plus extra for sprinkling)

1 tbsp cornstarch

½ tsp vanilla extract

1 egg (for egg wash)
Instructions

Make crust: Pulse flour, sugar, and salt in a food processor. Add butter and pulse until crumbly. Add ice water gradually until dough forms. Shape into a disk, wrap, and chill for 30 minutes.

Prepare filling: Toss strawberries with jam, sugar, cornstarch, and vanilla.

Assemble: Roll chilled dough into a 10-inch circle. Place strawberry filling in the center, leaving a 2-inch border. Fold edges over the filling, pleating gently.

Bake: Brush crust with egg wash and sprinkle with sugar. Bake at 375°F (190°C) for 40 minutes, until golden and bubbly. Cool slightly before serving.
