12 large egg whites

Instructions
Preheat your oven to 350°F (175°C). No greasing or lining necessary for the pan.
In a medium bowl, whisk together the sifted cake flour, ¾ cup of granulated sugar, and salt.
In a large bowl, using an electric mixer, begin beating the egg whites on medium speed until foamy.
Add the cream of tartar and continue to beat until soft peaks form.
Gradually add the remaining ¾ cup of granulated sugar, one tablespoon at a time, beating on high until stiff peaks form.
Gently fold in the vanilla extract, key lime juice, and lime zest with a spatula.
Sift the flour mixture over the egg whites in three additions, gently folding it in each time.
Pour the batter into an ungreased 10-inch tube pan, spreading it evenly.
Bake in your preheated oven for 35-40 minutes, or until golden and springs back when touched.
Once baked, invert the pan immediately onto a cooling rack and let cool completely in the pan.
Run a knife around the edges to release the cake, then invert it onto a serving plate. Dust with powdered sugar if desired.
