1 pound smoked kielbasa, sliced into ½-inch rounds
4 medium potatoes, peeled and diced
1 medium onion, chopped
2 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream or half-and-half
1 teaspoon dried thyme
1 teaspoon smoked paprika
Salt and pepper to taste
Chopped fresh parsley for garnish
In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the sliced kielbasa and cook until browned, about 5 minutes.
Toss in the chopped onion and minced garlic. Sauté until onion becomes translucent, about 3-4 minutes.
Add the diced potatoes, dried thyme, and smoked paprika. Stir to coat the potatoes.
Add chicken broth and bring to a gentle boil. Cover and simmer for 15-20 minutes, until potatoes are fork-tender.
For a creamier texture, use an immersion blender to blend part of the soup before adding cream. Optional.
Stir in heavy cream and let it simmer for an additional 5 minutes. Season with salt and pepper to taste.
