Description

Ingredients

500 grams of gnocchi (store-bought or homemade)
2 tablespoons of olive oil
Salt and pepper to taste
1 cup of cherry tomatoes, halved
1 cucumber, diced
1 red bell pepper, diced
1 small red onion, sliced thin
100 grams of feta cheese, crumbled (optional)
1 cup of natural yogurt (Greek yogurt works wonders!)
2 tablespoons of lemon juice (freshly squeezed)
1 teaspoon of garlic, minced
1 tablespoon of fresh dill or parsley, chopped
Instructions
Boil a large pot of salted water. Once boiling, add the gnocchi. They're done when they float to the surface, usually a few minutes. Drain and set aside.
In a large skillet, heat olive oil over medium-high heat. Add the drained gnocchi and sauté until golden brown and crispy, about 5-7 minutes.
While the gnocchi are cooking, chop your veggies. Toss together the cherry tomatoes, cucumber, bell pepper, and red onion in a large bowl.
In a small bowl, combine yogurt, lemon juice, minced garlic, and herbs. Stir until smooth and season with salt and pepper.
Once the gnocchi are crispy, let them cool for a minute. Then fold them into the bowl with the veggies, drizzle on the yogurt dressing, and toss gently.
