1 lb ground beef or Italian sausage
1 medium onion

28 oz canned crushed tomatoes

8 oz broken lasagna noodles or orecchiette pasta
2 tsp Italian seasoning
Salt and pepper

1 cup cottage cheese or ricotta
1 cup shredded mozzarella cheese
Fresh basil leaves

Instructions
- In a large pot, brown the ground beef or Italian sausage over medium heat until cooked through. Drain excess fat.
- Add the diced onion and minced garlic to the pot, sautéing until the onion is translucent.
- Stir in the crushed tomatoes, broth, and Italian seasoning. Bring to a simmer.
- Add the broken lasagna noodles or orecchiette pasta to the soup and cook according to package instructions until al dente.
- Season with salt and pepper to taste.
- Serve hot, topped with cottage cheese or ricotta, shredded mozzarella cheese, and fresh basil leaves.
