1 cup all-purpose flour

1 cup granulated sugar
2 large eggs
1/4 cup freshly squeezed lemon juice (about 2–3 large lemons)
2 tablespoons all-purpose flour
1 teaspoon lemon zest (optional)

Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine 1 cup of flour, 1/4 cup of powdered sugar, 1/2 cup of softened butter, and 1/4 teaspoon of salt. Mix until the mixture resembles coarse crumbs.
Press the crust mixture firmly into the bottom of a greased 8×8 inch baking dish. Bake it for about 15 minutes until it’s slightly golden.
