Instructions

1️⃣ Preheat & Prep:

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

2️⃣ Mix Dry Ingredients:

  • In a bowl, whisk together flour, baking powder, baking soda, and salt.

3️⃣ Cream Butter & Sugar:

  • In a separate bowl, beat butter and sugar until light and fluffy.
  • Add the egg, lemon zest, lemon juice, and vanilla extract, mixing until smooth.

4️⃣ Combine & Add Blueberries:

  • Gradually add dry ingredients to wet ingredients, mixing until just combined.
  • Toss blueberries in cornstarch, then gently fold them into the dough. If using, mix in white chocolate chips.

5️⃣ Bake to Perfection:

  • Scoop tablespoon-sized dough balls onto the prepared baking sheet.
  • Bake for 10-12 minutes, until edges are set and centers are soft.
  • Let cool on the pan for 5 minutes, then transfer to a wire rack.
