Instructions
1️⃣ Preheat & Prep:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2️⃣ Mix Dry Ingredients:
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
3️⃣ Cream Butter & Sugar:
- In a separate bowl, beat butter and sugar until light and fluffy.
- Add the egg, lemon zest, lemon juice, and vanilla extract, mixing until smooth.
4️⃣ Combine & Add Blueberries:
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Toss blueberries in cornstarch, then gently fold them into the dough. If using, mix in white chocolate chips.
5️⃣ Bake to Perfection:
- Scoop tablespoon-sized dough balls onto the prepared baking sheet.
- Bake for 10-12 minutes, until edges are set and centers are soft.
- Let cool on the pan for 5 minutes, then transfer to a wire rack.
