4 salmon fillets, about 6 ounces each
1 pound baby potatoes, halved or quartered
3 tablespoons olive oil, divided
3 tablespoons unsalted butter
2 cloves of garlic, minced
Juice and zest of 1 large lemon

Fresh parsley, chopped, for garnish
Instructions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine halved baby potatoes with 2 tablespoons of olive oil, salt, and pepper. Toss to coat.
Spread the potatoes on a baking sheet, cut side down, and roast in the oven for about 20-25 minutes until golden brown and crispy.
While the potatoes are roasting, pat the salmon fillets dry with a paper towel and season with salt and pepper.
In a small saucepan over medium heat, melt butter with the remaining tablespoon of olive oil. Add minced garlic and sauté for a minute until fragrant. Stir in lemon juice and zest, simmer for another minute.
