Ingredients

1/2 lb boneless chicken breast, diced

1 cup cooked orzo

1 cup broccoli florets

1/2 red bell pepper, sliced

1/2 zucchini, diced

2 tbsp olive oil

1 garlic clove, minced

Juice of 1 lemon

Zest of 1 lemon

Salt & pepper, to taste

Optional: chopped parsley or grated Parmesan for garnish
Instructions

Cook chicken: In a large skillet, heat 1 tbsp olive oil and sauté chicken until golden and cooked through. Remove and set aside.

Sauté veggies: Add remaining oil to the pan. Sauté broccoli, bell pepper, zucchini, and garlic until tender-crisp (4–5 minutes).

Combine: Return chicken to pan. Add cooked orzo, lemon juice, lemon zest, salt, and pepper. Toss everything to combine and heat through.

Serve: Garnish with parsley or Parmesan if desired.
