Ingredients

  • 1/2 lb boneless chicken breast, diced

  • 1 cup cooked orzo

  • 1 cup broccoli florets

  • 1/2 red bell pepper, sliced

  • 1/2 zucchini, diced

  • 2 tbsp olive oil

  • 1 garlic clove, minced

  • Juice of 1 lemon

  • Zest of 1 lemon

  • Salt & pepper, to taste

  • Optional: chopped parsley or grated Parmesan for garnish


Instructions

  • Cook chicken: In a large skillet, heat 1 tbsp olive oil and sauté chicken until golden and cooked through. Remove and set aside.

  • Sauté veggies: Add remaining oil to the pan. Sauté broccoli, bell pepper, zucchini, and garlic until tender-crisp (4–5 minutes).

  • Combine: Return chicken to pan. Add cooked orzo, lemon juice, lemon zest, salt, and pepper. Toss everything to combine and heat through.

  • Serve: Garnish with parsley or Parmesan if desired.

Notes

  • Use leftover or pre-cooked orzo to save time.

  • Swap veggies based on what you have—snap peas, spinach, or carrots work well.

  • Add a dash of red pepper flakes for a little kick.
