1 medium head of green cabbage, chopped (about 6 cups)
1 large onion, finely chopped
2 cloves of garlic, minced
4 cups vegetable broth
1 large potato, diced
1 teaspoon dried dill or 2 tablespoons fresh dill, chopped
1 large lemon, juiced
Salt and pepper to taste
2 tablespoons olive oil
Instructions
In a large pot, heat the olive oil over medium heat.
Add the chopped onion and a pinch of salt to the pot. Sauté for about 5 minutes, or until they become translucent and fragrant.
Stir in the minced garlic and sauté for an additional minute.
Toss in the chopped cabbage, stirring well to combine. Cook for about 5 minutes until it starts to soften.
Add the diced potato, dried dill, and pour in the vegetable broth. Stir everything well.
Increase the heat until it reaches a gentle simmer, then reduce to low. Cover the pot and let it cook for about 20 minutes, until the potatoes and cabbage are tender.
Once perfectly tender, stir in the lemon juice and season with salt and pepper to taste.
