Ingredients
Scale
8 oz pasta (your choice: spaghetti, linguine, or gluten-free)
1 cup garlic scapes (chopped into 1-inch pieces)
3 cloves garlic (minced)
3 tablespoons olive oil
1 lemon (juiced and zested)
1 teaspoon red pepper flakes (optional)
Salt & pepper to taste
¼ cup freshly grated Parmesan cheese
Fresh basil or parsley for garnish
Instructions
Boil your pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package instructions until al dente. Save about ½ cup of the pasta water before draining.
Prep the sauté: While your pasta is cooking, grab a large skillet over medium heat. Add the olive oil and let it warm up for about a minute.
Add the garlic scapes: Toss those lovely green stalks into the skillet, cooking them for about 2–3 minutes until they start to soften.
Add garlic: Stir in the minced garlic and cook for an additional minute, or until fragrant.
Mix it up: Pour in the lemon juice and most of the zest. Add in the red pepper flakes if you’re using them, then stir everything together.
Combine pasta and sauce: Add the drained pasta to the skillet along with the reserved pasta water. Toss everything together, adding the Parmesan cheese and mixing well.
Season: Taste and season with salt and pepper to your liking.
Serve: Plate your pasta and sprinkle with fresh basil or parsley and any remaining lemon zest.
