Ingredients

1 cup orzo pasta

1 cucumber, diced

1 cup cherry tomatoes, halved

¼ red onion, finely chopped

2 tablespoons olive oil

2 tablespoons fresh lemon juice

1 teaspoon lemon zest

Salt & pepper, to taste

Fresh parsley, chopped (optional)
Instructions

Cook orzo: Cook orzo according to package directions. Drain and rinse under cold water to cool.

Prepare veggies: In a large bowl, combine diced cucumber, cherry tomatoes, and red onion.

Make dressing: In a small bowl, whisk together olive oil, lemon juice, lemon zest, salt, and pepper.

Toss salad: Add cooled orzo to the veggie mixture. Pour dressing over the salad and toss gently.

Serve: Garnish with fresh parsley if desired. Chill for 15–20 minutes before serving for best flavor.
