Lemon Pizza is a unique and refreshing twist on traditional pizza, topped with creamy ricotta and fresh basil, perfect for a summer night.
Ingredients
Pizza dough: 1 lb (store-bought or homemade)
Olive oil: 2 tablespoons
Fresh lemons: 2 (zested and juiced)
Ricotta cheese: 1 cup
Mozzarella cheese: 1 cup (shredded)
Parmesan cheese: 1/2 cup (grated)
Fresh basil leaves: 1/4 cup (chopped)
Salt and pepper: to taste
Honey: 1 tablespoon (optional
for drizzling)
Red pepper flakes: a pinch (optional
for a spicy kick)
Instructions
- Preheat your oven to 475°F (245°C).
 - Roll out the pizza dough on a floured surface to your desired thickness.
 - Transfer the rolled dough to a baking sheet and brush it with olive oil.
 - Spread ricotta cheese evenly over the dough.
 - Sprinkle mozzarella and Parmesan cheese on top.
 - Zest and juice the lemons, then drizzle both the zest and juice over the cheese.
 - Season with salt, pepper, and red pepper flakes (if using).
 - Bake in the preheated oven for 12-15 minutes, until the crust is golden brown and the cheese is bubbly.
 - Remove from the oven, garnish with fresh basil, and drizzle with honey (if desired).
 - Let cool slightly before slicing and serving.
 
Notes
For an extra flavor kick, try adding a pinch of lemon zest on top before serving. This pizza pairs well with a crisp white wine.
