These Levain-style Rocky Road Cookies are thick, gooey, and packed with rich chocolate, crunchy nuts, and gooey marshmallows. Inspired by the famous Levain Bakery, they’re the ultimate treat for chocolate lovers!

- 1 cup (2 sticks) unsalted butter, cold & cubed
- 1 cup brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour
- ½ cup cake flour (for softness)
- ½ cup unsweetened cocoa powder
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 cups semi-sweet chocolate chunks
- 1 cup chopped walnuts or pecans
- 1 cup mini marshmallows
Instructions
- Prepare the Dough:
- Cream butter, brown sugar, and granulated sugar until fluffy.
- Mix in eggs and vanilla.
- In another bowl, whisk flours, cocoa powder, baking powder, baking soda, and salt.
- Gradually mix dry ingredients into the wet.
- Add the Mix-ins:
- Fold in chocolate chunks and nuts.
- Chill the dough for at least 30 minutes.
- Bake the Cookies:
- Preheat oven to 375°F (190°C).
- Scoop large dough balls onto a baking sheet.
- Press a few mini marshmallows into each.
- Bake for 10-12 minutes until edges are set but centers are gooey.
- Cool & Serve:
- Let cool for a few minutes before enjoying the melty goodness!
Notes
- For extra fudginess, use dark chocolate chunks.
- Toast the nuts for a richer flavor.
- Store in an airtight container for up to 3 days.
