4 cups Little Gem lettuce, washed and torn into bite-sized pieces
2 medium courgettes, sliced into ½ inch rounds
200g feta cheese, crumbled
2 tablespoons olive oil
1 garlic clove, minced
1 tablespoon lemon juice
Salt and pepper to taste
Optional: a handful of fresh herbs (like mint or parsley)
Preheat your griddle pan or a large frying pan over medium-high heat.
Drizzle a tablespoon of olive oil on the courgette slices and sprinkle them with salt and pepper.
Add the courgette slices in a single layer to the pan, working in batches if needed.
Griddle the courgette for about 2-3 minutes on each side until tender with grill marks.
