For the Chicken Fajita:

  • 2 boneless, skinless chicken breasts, sliced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp lime juice

For the Burrito Bowl:

  • 1 cup cooked brown or white rice
  • 1 cup black beans, drained and rinsed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 1 tbsp olive oil
  • ½ cup corn (optional)
  • ½ cup shredded cheddar or Mexican blend cheese
  • ¼ cup sour cream or Greek yogurt
  • 1 avocado, sliced
  • ¼ cup fresh salsa or pico de gallo
  • Fresh cilantro and lime wedges, for garnish

Instructions

  • Marinate the Chicken: In a bowl, mix olive oil, lime juice, and fajita seasonings. Toss in the chicken slices and marinate for 15-30 minutes.

  • Cook the Chicken: Heat a skillet over medium-high heat. Cook the chicken for 5-7 minutes per side until fully cooked. Remove and set aside.

  • Sauté the Peppers & Onions: In the same skillet, heat olive oil and sauté the sliced bell peppers and onion for 4-5 minutes until tender-crisp.

  • Assemble the Bowls: Divide the cooked rice into bowls. Top with black beans, grilled chicken, sautéed peppers and onions, corn, shredded cheese, avocado slices, and fresh salsa.

  • Add Garnishes & Serve: Drizzle with sour cream or Greek yogurt, sprinkle with fresh cilantro, and serve with lime wedges.

Notes

  • Swap rice for cauliflower rice for a low-carb option.
