This Loaded Chicken Fajita Burrito Bowl is a delicious, hearty dish loaded with grilled chicken, sautéed peppers, rice, beans, and fresh toppings. Packed with bold fajita flavors, it’s a perfect meal for a quick lunch or dinner!
Ingredients
For the Chicken Fajita:
- 2 boneless, skinless chicken breasts, sliced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp lime juice
For the Burrito Bowl:
- 1 cup cooked brown or white rice
- 1 cup black beans, drained and rinsed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, sliced
- 1 tbsp olive oil
- ½ cup corn (optional)
- ½ cup shredded cheddar or Mexican blend cheese
- ¼ cup sour cream or Greek yogurt
- 1 avocado, sliced
- ¼ cup fresh salsa or pico de gallo
- Fresh cilantro and lime wedges, for garnish

Marinate the Chicken: In a bowl, mix olive oil, lime juice, and fajita seasonings. Toss in the chicken slices and marinate for 15-30 minutes.

Cook the Chicken: Heat a skillet over medium-high heat. Cook the chicken for 5-7 minutes per side until fully cooked. Remove and set aside.

Sauté the Peppers & Onions: In the same skillet, heat olive oil and sauté the sliced bell peppers and onion for 4-5 minutes until tender-crisp.

Assemble the Bowls: Divide the cooked rice into bowls. Top with black beans, grilled chicken, sautéed peppers and onions, corn, shredded cheese, avocado slices, and fresh salsa.

Add Garnishes & Serve: Drizzle with sour cream or Greek yogurt, sprinkle with fresh cilantro, and serve with lime wedges.
