Ingredients

  • 1 bag (32 oz) frozen tater tots
  • 2 cups cooked pulled pork (or shredded chicken)
  • ½ cup BBQ sauce
  • 2 cups shredded cheddar cheese
  • ½ cup cooked bacon bits
  • ½ cup diced red onion
  • ½ cup sliced jalapeños (optional)
  • ¼ cup chopped green onions
  • ½ cup sour cream (for topping)

Instructions

  • Preheat oven to 425°F (220°C) and bake tater tots according to package instructions until crispy.
  • In a bowl, mix pulled pork with BBQ sauce.
  • Once tots are crispy, spread them out on a large baking sheet or cast-iron skillet.
  • Layer with pulled pork, cheese, bacon, red onions, and jalapeños.
  • Return to oven for 5-7 minutes until cheese is melted and bubbly.
  • Remove from oven, top with green onions and sour cream. Serve hot!
