  • 32 oz of frozen tater tots
  • 1 lb of ground beef
  • 1 packet of taco seasoning
  • 2 cups of shredded cheddar cheese
  • 1 can (15 oz) of black beans, rinsed and drained
  • 1 cup of diced tomatoes
  • 1 cup of shredded lettuce
  • ½ cup of sliced jalapeños
  • ½ cup of sour cream
  • ½ cup of salsa
  • Fresh cilantro, chopped (for garnish)
  • Salt and pepper, to taste

  • Instructions

  • Preheat your oven to 425°F (220°C).
  • Spread the frozen tater tots in an even layer on a large baking sheet. Bake them according to package instructions for about 20-25 minutes until golden and crisp.
  • While the tots are baking, heat a skillet over medium heat. Add the ground beef, breaking it up with a spatula, and cook until brown, about 5-7 minutes. Season with salt, pepper, and taco seasoning.
  • Once the beef is cooked, stir in the rinsed black beans and cook together for another 2-3 minutes.
  • Take the tater tots out of the oven, and use a fork to gently smash them down to create a flat surface.
  • Sprinkle half of the cheese over the smashed tater tots, layer the beef and bean mixture, followed by the diced tomatoes, and top with the remaining cheese.
  • Place the loaded totchos back in the oven for another 5-7 minutes until the cheese is bubbly.
  • Remove from the oven and top with shredded lettuce, jalapeños, sour cream, and salsa. Optionally garnish with fresh cilantro.
