32 oz of frozen tater tots
1 lb of ground beef
1 packet of taco seasoning
2 cups of shredded cheddar cheese
1 can (15 oz) of black beans, rinsed and drained
1 cup of diced tomatoes
1 cup of shredded lettuce
½ cup of sliced jalapeños
½ cup of sour cream
½ cup of salsa
Fresh cilantro, chopped (for garnish)
Salt and pepper, to taste
Instructions
Preheat your oven to 425°F (220°C).
Spread the frozen tater tots in an even layer on a large baking sheet. Bake them according to package instructions for about 20-25 minutes until golden and crisp.
While the tots are baking, heat a skillet over medium heat. Add the ground beef, breaking it up with a spatula, and cook until brown, about 5-7 minutes. Season with salt, pepper, and taco seasoning.
Once the beef is cooked, stir in the rinsed black beans and cook together for another 2-3 minutes.
Take the tater tots out of the oven, and use a fork to gently smash them down to create a flat surface.
Sprinkle half of the cheese over the smashed tater tots, layer the beef and bean mixture, followed by the diced tomatoes, and top with the remaining cheese.
Place the loaded totchos back in the oven for another 5-7 minutes until the cheese is bubbly.
Remove from the oven and top with shredded lettuce, jalapeños, sour cream, and salsa. Optionally garnish with fresh cilantro.
