Indulge in the delightful flavors of London Fog Cake, a moist Earl Grey-infused cake layered with a soothing lavender cream cheese frosting.
Ingredients
3 tbsp (12 g) Earl Grey tea
1 tbsp (2 g) culinary lavender
2 1/4 cups (282 g) all-purpose flour
spooned and leveled
1 1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
10 tbsp (140 g) unsalted butter
softened
1 1/2 cups (300 g) granulated white sugar
3 eggs
at room temperature
1 tbsp vanilla bean paste
1 cup (240 ml) buttermilk
1/2 cup whole milk
2 tbsp (8 g) Earl Grey tea
1/2 tbsp (1 g) culinary lavender
1/2 cup (150 g) sweetened condensed milk
1/2 tsp vanilla bean paste
1 tbsp (2 g) culinary lavender
1 cup (224 g) unsalted butter
softened
8 oz (226 g) cream cheese
cold
2 cups (260 g) powdered sugar
1 tsp vanilla bean paste
purple food coloring (optional)
Instructions
- Preheat your oven to 350°F (177°C) and grease three 8-inch cake pans.
- In a small bowl, combine Earl Grey tea and culinary lavender. Steep in 1 cup boiling water for 15 minutes, then strain and cool the tea.
- In a large bowl, whisk flour, baking powder, baking soda, and salt together.
- In another bowl, cream the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla bean paste.
- Alternate adding the dry ingredients and buttermilk to the creamed mixture, beginning and ending with dry ingredients. Mix until just combined.
- Divide the batter evenly among the prepared pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- For the milk soak, heat the whole milk, Earl Grey tea, and culinary lavender until just simmering, then let cool. Stir in sweetened condensed milk and vanilla bean paste.
- Once the cakes are out of the oven, let them cool for 10 minutes before removing from the pans. Poke holes in the cakes and brush with the milk soak.
- For the frosting, steep culinary lavender in softened butter for 10 minutes, then strain. Beat together strained butter, cream cheese, powdered sugar, and vanilla bean paste until fluffy. Add food coloring if desired.
- Frost the cooled cakes and layer them before adding a final coat on top and the sides. Decorate as desired and enjoy!
Notes
Make sure to steep the tea and lavender properly for maximum flavor. Allow the cakes to cool completely before frosting to prevent melting.
