1 cup buttermilk

1/2 cup shredded cheddar cheese

1/2 cup shredded Monterey Jack cheese

1/4 cup sliced jalapeños

1/4 cup chopped green onions

1/4 cup crumbled bacon

Vegetable oil for frying


Instructions

  • Begin by peeling and cutting the russet potatoes into thick fries.
  • Soak the fries in cold water for at least 30 minutes, then drain and pat dry.
  • In a bowl, mix the flour, Cajun seasoning, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper.
  • Dip the dry fries into the buttermilk, then coat them in the seasoned flour mixture.
  • Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  • Fry the coated fries in batches for about 4-6 minutes or until golden brown and crispy.
