1 lb ground beef
1 small onion, diced
2 cloves fresh garlic, minced
1 can (14 oz) diced tomatoes, drained
1 tablespoon Italian seasoning
1 teaspoon salt
½ teaspoon black pepper
1 cup pepperoni slices
2 cups shredded mozzarella cheese
½ cup grated Parmesan cheese
2 cups spinach (fresh or frozen, thawed and drained)
Optional: red pepper flakes for some heat
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes.
Add the diced onion and minced garlic, sauté until onions are translucent, about 3-4 minutes.
Stir in the drained diced tomatoes, Italian seasoning, salt, and pepper, and let it simmer for a couple more minutes.
Stir in your spinach until it's wilted and well incorporated.
In a greased 9×13 inch baking dish, spread half the meat mixture evenly, sprinkle half of the mozzarella cheese and half of the pepperoni over the top.
Add the remaining meat mixture, top it with the rest of the mozzarella, and finish with the remaining pepperoni slices and Parmesan cheese.
Bake for about 25-30 minutes, or until the cheese is bubbly and golden brown.
