3 lbs beef chuck roast, trimmed for less fat
1 cup beef broth
1 can (14 oz) crushed tomatoes
2 tablespoons tomato paste
1 large onion, sliced
4 cloves fresh garlic, minced
2 teaspoons dried oregano
1 teaspoon dried basil
1 tablespoon Italian seasoning
Salt and pepper to taste
1–2 tablespoons olive oil for browning the meat
Fresh parsley for garnish (optional)
Pat the beef chuck roast dry with paper towels. Season with salt and pepper on all sides.
In a large skillet over medium-high heat, add olive oil. Brown the roast on all sides (about 3-4 minutes per side).
Transfer the browned roast to the slow cooker. Add sliced onions and minced garlic on top of the meat.
In a bowl, combine the crushed tomatoes, tomato paste, beef broth, oregano, basil, and Italian seasoning. Stir well.
Pour the tomato mixture over the roast in the slow cooker.
Cover and cook on low for 8 hours or high for 4-5 hours.
Once cooking time is up, shred the beef and mix it back into the sauce.
