2 cups of elbow macaroni
1 cup of diced ham
1 cup of shredded cheddar cheese
1 cup of mayonnaise
1 tablespoon of Dijon mustard
1 tablespoon of apple cider vinegar
1 cup of diced celery
1/2 cup of diced red bell pepper
1/4 cup of green onions
Salt and pepper to taste
Optional: A sprinkle of paprika for garnish
Cook the macaroni in boiling salted water until al dente, about 7-10 minutes.
Drain and rinse the macaroni under cold water to stop cooking.
In a large bowl, combine mayonnaise, Dijon mustard, and apple cider vinegar and whisk until smooth.
Fold in diced celery, red bell pepper, and green onions to the dressing.
Add drained macaroni, diced ham, and shredded cheddar cheese. Stir gently to combine.
Season with salt and pepper. Add paprika if desired.
Chill in the refrigerator for at least 30 minutes before serving.
