2 cups elbow macaroni (uncooked)
1 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon sugar
1 cup celery, diced
1 cup bell peppers, diced
1/2 cup red onion, finely chopped
1/2 cup sweet pickle relish
Salt and pepper, to taste
1 cup cooked chicken or tuna (optional)
Fresh parsley, chopped (for garnish)
Instructions
In a large pot of boiling salted water, cook the elbow macaroni according to the package instructions until al dente. Drain, rinse with cold water, and let cool completely.
In a large bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, and sugar.
Toss in the diced celery, bell peppers, red onion, and relish. Mix well to coat with the dressing.
Add the cooled pasta to the bowl and gently mix everything. Season with salt and pepper to taste.
Cover and refrigerate for at least 1 hour before serving.
Serve chilled, garnished with fresh parsley.
