  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar

  • 1 tablespoon sugar
  • 1 cup celery, diced
  • 1 cup bell peppers, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup sweet pickle relish
  • Salt and pepper, to taste
  • 1 cup cooked chicken or tuna (optional)
  • Fresh parsley, chopped (for garnish)

  • Instructions

  • In a large pot of boiling salted water, cook the elbow macaroni according to the package instructions until al dente. Drain, rinse with cold water, and let cool completely.
  • In a large bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, and sugar.
  • Toss in the diced celery, bell peppers, red onion, and relish. Mix well to coat with the dressing.
  • Add the cooled pasta to the bowl and gently mix everything. Season with salt and pepper to taste.
  • Cover and refrigerate for at least 1 hour before serving.
  • Serve chilled, garnished with fresh parsley.
