1 ½ cups uncooked white rice
3 cups chicken broth
2 cups cooked chicken, shredded or diced
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
1 cup shredded cheddar cheese
1 tsp onion powder
1 tsp garlic powder
½ tsp salt
½ tsp black pepper
1 cup frozen mixed vegetables
1 tbsp olive oil
Panko breadcrumbs (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a medium-sized pot, combine the uncooked rice and chicken broth. Bring it to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes until the rice is tender.
In a large mixing bowl, combine the cooked rice, shredded chicken, cream of chicken soup, sour cream, and half of the cheddar cheese. Stir in the onion powder, garlic powder, salt, pepper, and frozen mixed vegetables.
Lightly grease a 9×13 inch baking dish with olive oil, then pour your mixture into the dish. Spread it out evenly and sprinkle the remaining cheese on top. Optionally, add panko breadcrumbs for crunch.
Bake in the preheated oven for about 30–40 minutes, or until the cheese is melted and bubbly. Let it rest for 5–10 minutes before serving.
