Ingredients
Scale
1 bunch of garlic scapes, about 8–10 pieces
1 tablespoon olive oil
1 tablespoon soy sauce
1 tablespoon gochugaru
1 teaspoon sesame oil
1 tablespoon vinegar
1 teaspoon sugar
Salt to taste
Sesame seeds, for garnish
Instructions
Prep the Garlic Scapes: Rinse your garlic scapes under cold water. Pat them dry with a paper towel. Trim the ends, about an inch off, and discard any wilted parts. Cut the scapes into 2-inch pieces for easier handling.
Blanch Them: Bring a small pot of salted water to a boil. Toss in the garlic scapes and blanch for about 2-3 minutes until they become tender yet still crisp. Drain and immediately rinse under cold water to stop the cooking process.
Make the Dressing: In a medium bowl, whip together the olive oil, soy sauce, gochugaru, sesame oil, vinegar, sugar, and a pinch of salt.
Combine: Toss the blanched garlic scapes in the dressing, ensuring they’re well-coated. Use your hands or a spoon to mix gently.
Serve: Transfer to a serving dish, sprinkle with sesame seeds, and enjoy!
