Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 ripe mango, peeled and diced

  • 2 tablespoons olive oil

  • 1 tablespoon honey

  • 1 tablespoon lime juice

  • 1 teaspoon ginger, grated

  • 1 teaspoon garlic powder

  • Salt & pepper, to taste

  • Fresh cilantro, for garnish


Instructions

  • Prepare chicken: Season chicken breasts with salt, pepper, and garlic powder.

  • Cook chicken: Heat olive oil in a skillet over medium-high heat. Cook chicken for 6–7 minutes on each side, until golden and cooked through. Remove from skillet and set aside.

  • Make mango sauce: In the same skillet, add diced mango, honey, lime juice, and ginger. Cook for 3–5 minutes, mashing the mango slightly until the sauce thickens.

  • Serve: Return chicken to the skillet, spoon mango sauce over the top, and cook for another 2 minutes. Garnish with fresh cilantro before serving.

Notes

  • Add a touch of chili flakes for a spicy kick.

  • Serve with rice, quinoa, or a green salad to complete the meal.

  • For extra flavor, marinate the chicken in lime juice and honey for 30 minutes before cooking.
