Ingredients

4 boneless, skinless chicken breasts

1 ripe mango, peeled and diced

2 tablespoons olive oil

1 tablespoon honey

1 tablespoon lime juice

1 teaspoon ginger, grated

1 teaspoon garlic powder

Salt & pepper, to taste

Fresh cilantro, for garnish
Instructions

Prepare chicken: Season chicken breasts with salt, pepper, and garlic powder.

Cook chicken: Heat olive oil in a skillet over medium-high heat. Cook chicken for 6–7 minutes on each side, until golden and cooked through. Remove from skillet and set aside.

Make mango sauce: In the same skillet, add diced mango, honey, lime juice, and ginger. Cook for 3–5 minutes, mashing the mango slightly until the sauce thickens.

Serve: Return chicken to the skillet, spoon mango sauce over the top, and cook for another 2 minutes. Garnish with fresh cilantro before serving.
