4 cups of fresh corn kernels (about 6–8 ears of corn) or frozen corn
1 pound of smoked sausage (like Andouille), sliced into rounds
1 medium onion, diced
1 red bell pepper, diced
2 cloves of garlic, minced
1 cup heavy cream or half-and-half
1 tablespoon olive oil or butter
1 teaspoon smoked paprika
1 teaspoon cayenne pepper
Salt and black pepper to taste
Fresh parsley or green onions for garnish
Instructions
In a large skillet over medium heat, warm the olive oil (or melt the butter). Add the sliced sausage and cook until browned and slightly crispy, about 5-7 minutes.
Toss in the diced onion and bell pepper. Sauté until softened and the onion turns translucent, around 4-5 minutes.
Add the minced garlic and cook for an additional minute, stirring frequently.
Add in the corn, pour in the cream or milk, then sprinkle in smoked paprika and cayenne pepper. Stir everything together until well combined.
Season with salt and black pepper to taste. Reduce heat to low, cover, and let it simmer for about 15 minutes.
After 15 minutes, stir occasionally, and let it cook until the corn is tender and the mixture has thickened slightly.
