  • 1/4 cup powdered sugar

For the Filling:

  • 3 large eggs
  • 3/4 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1 tbsp orange juice (or Grand Marnier for a boozy twist)
  • 1 tsp lime zest
  • 1/4 tsp salt

For Topping:

  • Powdered sugar
  • Lime zest

Instructions

  • Prepare the Crust:
    • Preheat oven to 175°C (350°F).
    • Mix flour, powdered sugar, melted butter, and salt. Press into a greased 8×8-inch pan.
    • Bake for 15 minutes until lightly golden.
  • Make the Filling:
    • Whisk eggs, sugar, flour, lime juice, orange juice, lime zest, and salt until smooth.
    • Pour over the warm crust and bake for another 18-20 minutes until set.
  • Cool & Serve:
    • Let cool completely, then dust with powdered sugar and lime zest.
    • Slice into bars and enjoy!
