For the Crust:
- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, melted
- 1/4 tsp salt
For the Filling:
- 3 large eggs
- 3/4 cup granulated sugar
- 2 tbsp all-purpose flour
- 1/4 cup fresh lime juice (about 2 limes)
- 1 tbsp orange juice (or Grand Marnier for a boozy twist)
- 1 tsp lime zest
- 1/4 tsp salt
For Topping:
- Powdered sugar
- Lime zest
Instructions
- Prepare the Crust:
- Preheat oven to 175°C (350°F).
- Mix flour, powdered sugar, melted butter, and salt. Press into a greased 8×8-inch pan.
- Bake for 15 minutes until lightly golden.
- Make the Filling:
- Whisk eggs, sugar, flour, lime juice, orange juice, lime zest, and salt until smooth.
- Pour over the warm crust and bake for another 18-20 minutes until set.
- Cool & Serve:
- Let cool completely, then dust with powdered sugar and lime zest.
- Slice into bars and enjoy!
Notes
- Add a pinch of sea salt on top for a margarita-style kick.
- Swap lime juice for lemon juice for a citrusy twist.
- Chill bars before serving for the best flavor.
