Marinated Cherry Tomatoes with Burrata is a light, elegant dish bursting with fresh summer flavor. Sweet tomatoes soak in a simple marinade and pair beautifully with creamy burrata. Serve it as an appetizer or refreshing side.

Ingredients

Scale

2 cups cherry tomatoes, halved

1 clove garlic, minced

2 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

1 teaspoon honey

Salt and freshly ground black pepper to taste

1 tablespoon chopped fresh basil or parsley

8 oz burrata cheese

Toasted baguette slices or crusty bread, for serving

1. In a bowl, combine halved cherry tomatoes, garlic, olive oil, balsamic vinegar, honey, salt, pepper, and fresh herbs.

2. Toss gently to coat. Let marinate at room temperature for at least 30 minutes.

3. Place burrata on a serving plate or shallow bowl.

4. Spoon marinated tomatoes over and around the burrata.

5. Drizzle with extra marinade.

6. Serve immediately with toasted bread for scooping.

Notes

Add chili flakes or lemon zest for extra flavor.
