Tender, juicy chicken simmered in a rich, creamy sun-dried tomato sauce with garlic, parmesan, and herbs. It’s so good, it just might inspire a proposal!
Ingredients
-
4 boneless, skinless chicken breasts
-
Salt and black pepper, to taste
-
1 tbsp olive oil
-
3 cloves garlic, minced
-
½ cup chicken broth
-
¾ cup heavy cream
-
⅓ cup grated parmesan cheese
-
½ cup sun-dried tomatoes (in oil), chopped
-
1 tsp dried oregano
-
½ tsp crushed red pepper flakes (optional)
-
Fresh basil or parsley, for garnish
Instructions
-
Sear the chicken: Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden. Remove and set aside.
-
Make the sauce: In the same skillet, sauté garlic until fragrant. Add chicken broth and deglaze the pan. Stir in heavy cream, parmesan, sun-dried tomatoes, oregano, and red pepper flakes.
-
Simmer: Return chicken to the skillet. Simmer over medium-low heat for 10–12 minutes, until chicken is cooked through and sauce thickens.
-
Garnish and serve: Sprinkle with fresh basil or parsley. Serve hot over pasta, rice, or mashed potatoes.
Notes
-
Swap chicken breasts for boneless thighs for extra juiciness.
-
Great with linguine, garlic bread, or roasted vegetables.
-
Can be made ahead and reheated—flavors deepen overnight.
